"If you fall I will catch you, I will be waiting, time after time." Yes, I have to be honest, this 80's hit by Cyndi Lauper was part of the inspiration in making this beer. Thyme after Thyme is our version of a Strong Belgian Winter Ale. Initial tasting leads to a zesty orange rind and herbal aroma. Mouthfeel has weight and comes across with a white grape and subtle, herbal character that coats the tongue and lingers with a glimpse of Thyme. Mild warmth on the tail end of the finish gives a small view into its lofty 9% abv. Both Orange peel and Thyme were added during the primary fermentation so as the beer developed the spices were slowly stripped away leading to a well balanced spiced ale that is a great companion for a comfy couch and a roaring fire.

The Public™ Pale Ale is brewed in the classic American Pale Ale style. Assertive bitterness backed by C-60 and Vienna malts which lend notes of rich, yet semi-dry caramel. The Corruption™ IPA is DC Brau's take on a Pacific Northwest IPA. Brewed with Pale 2 row, C-10, Honey and Victory malts. Exclusively hopped with 40 lbs of Columbus hops per brew to ring in at 80 IBU."The Corruption" comes in at 6.5% ABV. This beer straddle's the line between IPA and Imperial IPA and has a supportive malty backbone with an assertive hop presence that smacks your mouth with a dank, resinous bitterness followed by pleasant aroma's of pine sap and burnt spruce.

The Citizen™ Belgian Ale is inspired by the timeless Tripel style ales of Belgium. Stillwater Artisanal Ales & DC Brau's NATAS Collaboration Beer - NATAS is a Belgian Style Imperial Porter brewed with a traditional high gravity Abbey yeast. At first glance this brew is pitch black in the glass, with wafting aroma's of burnt sugar and caramelized fruit. The mouthfeel is silky smooth with hints of cocoa. It has a gentle, warming phenolic character that begs for a follow up inquiry. The hops are used to balance this brew and lend a subtle complexity. The dark lord himself would be proud to serve this hellish offering to his legions of demonic minions.

Epic & DC Brau's Fermentation Without Representation Collaboration Beer - This Imperial Pumpkin Porter is a smooth, mellow bodied and experimental collaboration with Epic Brewing from Salt Lake City, UT. ATLAS FEST BIER is our seasonal offering of a traditional German-style Spezial Helles brewed only for Fall. Ours will be released just in time for the 2011 H St. Festival. Fermented at 58-60°F for 2 weeks and then lagered for 5 weeks - progressively reducing the temperature by 2°F each day until we reach our terminal temperaure of 36°F. ATLAS FEST BIER is brewed with American Brewers 2 row Pale malt, Munich malt and Aromatic malt. It was hopped with American grown German Perle to achieve a light, highly drinkable 17 IBU. There are also bready, biscuty and sweet malt notes in the aroma.

We crafted EL HEFE SPEAKS!, our fond farewell to summer, as a collaboration with John Solomon and Chris Frashier. The pair are well known for their fine (and tasty!) work at Old Dominion in Ashburn, VA, during the mid 90's. EL HEFE SPEAKS! is a traditionally brewed German-style Hefe. It is fermented around 65°F and hopped with German Tettnang hops. 11 IBUs and 5.3% ABV make this one extremely drinkable. If you think it speaks to you as well, definitely try a glass... because it will be gone before you can say "sweater weather".

In draft news, Thyme After Thyme is available at the brewery as well as on tap in bars and restaurants. Also, you have spoken and Penn Quarter Porter will be coming back on tap soon! In can news, all three of our flagship beers (Citizen, Corruption, and Public) are available in cans!
We hope that you enjoyed our NATAS collaboration with Stillwater Artisanal Ales! We look forward to more collaboration brews in 2012 along with the release of all three of our flagship beers in cans! Cans will be available in retail, from the brewery, and at bars & restaurants! Look for them around the end of January 2012.
